Aimee Diaz Obituary, – Funeral services will be held in the Ss. Peter and Paul Catholic Church in Mankato on Thursday, at eleven in the morning. The service will be held on Thursday. The Reverend Donald Rauscher S.J. will act in the role of master of ceremonies at the event. Visitation will begin at the Mankato Mortuary at 4:07 p.m. on Wednesday, and it will continue at the church on Thursday morning for one hour prior to the commencement of services. Services will begin at 10:00 a.m. The funeral services are scheduled to start at ten o’clock in the morning. The start time of the ceremony is going to be ten o’clock in the morning.
Donations in the form of money can be provided to Ryan and Ashley, who are Amy’s children, to assist in providing financial assistance for them as they go through this challenging time. It is possible to do this in place of the traditional floral tributes. Amy Elizabeth Diaz was born on the 19th of October in the year 1970 in the city of Farmington, which is situated within the state of Minnesota. Her parents were James Henderson and Evangeline (Ahern) Henderson. After graduating from Austin High School with her high school diploma in 1989, she went on to further her education at South Central Technical College, which is situated in North Mankato.
Both of these educational institutions awarded her with a diploma upon completion of her studies there. Amy worked full-time at Hickory Technical College; however, she was also employed at Mickey’s Sports Bar and Grill in Mankato, Minnesota. This was in addition to her full-time job at Hickory Technical College. Her interests included competitive sports such as golf and softball, as well as recreational activities such as going camping and rooting for the Minnesota Vikings. Her favorite team was the Minnesota Vikings. The Minnesota Vikings were her all-time favorite football team.
She is survived by the father of her children, Leon Diaz, who resides in Mankato; her children, Ryan and Ashley Diaz, both of which reside in Mankato; her parents, James and Eva Jo Henderson, who reside in Flandreau, South Dakota; three sisters, Julie Henderson of Landcaster, California, Kathy (Jimmy) Kinsey of St. Marys, Georgia, and Susan Shirley of Homer, Georgia; and two brothers, David (Kim) Henderson and John (Angi
